Chenin Blanc, Chardonnay and Mauzac. Sustainable viticulture. Organic treatments only. 83% of the base wine was fermented in stainless steel, 17% was fermented and aged in French oak barrels. Three years and nine months sur lattes. Zero dosage. TA 3.26 g/l, pH 3.3, RS < 1 g/l. Pressure 6.9 bars.
There is a spring-portal scent that, for me, like no other smell, tells me that the earth is coming alive again; spring is on its way. It is the smell of blackthorn blossom. It is a slender smell; it runs along invisible, spider-spun ley lines. You can’t seek it out, and sometimes you can’t even smell it when you pile your whole face into a bough of the impossibly delicate flowers. You brush into it, advertently. Walk past it, through it, trying to inhale the invisible, ethereal molecules into your winter-weary, flower-starved nose. I have not yet smelt the first blackthorns without the ache of tears, relief, behind my eyes. Because they always break at that point when winter has been too long. Blackthorn blossoms are the first reminder that the earth keeps turning round. That’s Saphir. The wine that tastes of the cusp between winter and spring: cold dark earth, white blossom; green pear, wild mushroom; gyokuro green tea, yuzu peel; shortening shadows, lengthening light. A wine that, for me, symbolises 2021 – the light at the end of a long, dark tunnel. (TC)

A special Crémant, made for Jan and Caryl’s 45th wedding anniversary. 17% is fermented and aged in French oak barrels. The wine spends 40 months on the lees of the second fermentation. No added dosage, which makes it something of an acquired taste, compared to some softer Crémants I found this very restrained and elegant. Without any dosage, it lacks the usual rounded creaminess of the average Crémant, and has a firm backbone of acidity and quite a tight knit palate, with good depth on the finish. There are some yeasty brioche notes on the nose. A Crémant to linger over; a wine that gradually reveals itself.

GUIDE DES VINS GAILLARD & GILBERT 2011 Robe jaune clair. Nez net mêlant fleurs blanches, chair de poire, note de pain au lait. Attaque charnue, sur le fruit, l’évolution apporte de la fraîcheur et termine sur une note de vivacité. A déguster bien frais à l’apéritif. 86/100
Light yellow colour. Nose blends white flowers with pear, notes of milk bread. Fleshy fruit driven attack. Mid palate freshness leads to lively notes in the finish. Serve well chilled, as an apéritif.
JANCIS ROBINSON PURPLE PAGES (May 2010) Apple-cream rich nose. Long and with real depth. Thrilling acidity and life and a fine mousse. Apple-brioche notes. Absolutely delightful. Who needs champagne?

The wine has spent at least eighteen months, if not 24 months on the lees. It is ripe and rounded, with some attractive fruit and a creamy finish. An elegant, creamy mouthful.

A modernised expression of Languedoc sparkling, this comes under the appellation of Crémant de Limoux using a blend of chenin blanc and chardonnay. Unlike the Blancquette, this was significantly full and juicy. The initial attack focused on fresh acidity, but it didn’t took long before a rounded sensation took over, showing the increased mid palate fullness

Pale straw and bright fresh acidity. Just a hint of honey on the finish. but overall very nice texture. Gentle constant bead, and the impression overall is of an appetising, if far from bone dry, wine and crystalline acidity.
GUIDE REVEL CHAMPAGNE ET AUTRES BULLES 2014 D’abord fermentaire, le nez s’exprime rapidement sur des aromes de biscuits secs et de fruits blancs acidulés. L’attaque en bouche est ferme, minérale, croquante, elle précède une tension en belle harmonie avec l’effervescence soignée qu’illustrent des bulles très fines et nouées. La finale dévoile quelques amers qui apportent du corps au lieu de contrarier la dégustation, on est en présence d’un crémant plus autoritaire que charmeur, d’une belle personnalité toutefois.

Bubbles are not the tiniest. This doesn’t smell at all champagne-like – and why should it? You are very aware of the Chenin component. Light and delicate. Well-made and well-balanced fizz. Not much evolution or complication. Simple and straightforward.
